Blueberry Cookies

Recipe Blueberry Cookies

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar
  • 1/4 cup caster sugar or granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 1 ½ cups plain flour or all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate, roughly chopped
  • 1/2 cup dried blueberries

    Method:

    1. Preheat oven to 180°C standard/160°C fan forced. Line two baking trays with baking paper.
    2. In a large mixing bowl, add butter and sugars and beat using an electric beater for a minute or two until smooth and creamy. Add egg and vanilla and beat until combined, scraping down the sides of the bowl.
    3. Add flour, baking soda and salt, and beat briefly until a soft cookie dough forms. Add chocolate chunks and blueberries and mix through.
    4. Scoop out cookie dough, roughly 1.5 tablespoons per cookie, and roll each ball smooth in your hands. Place cookie dough balls on prepared trays, leaving room for cookies to spread out in the oven.
    5. Place in oven for 10-12 minutes or until golden brown on the edges. Leave to cool for 5-10 minutes before transferring to a wire rack to cool completely.
