Recipe Fruit Mince Slice

Ingredients

    • 170g butter
    • ½ cup caster sugar
    • 1 egg
    • ½ tsp vanilla essence
    • 1 tbsp honey
    • 1 cup self raising flour
    • 1½ cups plain flour
    • Icing sugar, to serve

    Filling

    • 2½ cups mixed dried fruit
    • 1/4 cup sweet sherry (or orange juice)
    • 1/4 cup brown sugar
    • 2 tsp ground cinnamon
    • 1 tsp ground nutmeg

      Serves 12 | Cooking time 50 mins

      Method:

      1. Preheat the oven to 200°C (180°C fan-forced). Grease a 3cm deep 17 x 28cm baking tray and line with baking paper
      2. Combine all the filling ingredients in a medium saucepan. Heat over high heat, stirring occasionally for 5-7 mins until sugar has melted and mixture is almost boiling. Remove from the heat and leave to cool
      3. Place butter, sugar, flour, egg, vanilla and honey in food processor and process until a thick dough forms. Lightly flour a large chopping board or bench top and knead dough until smooth. Cut the dough in half, roll out one piece and press into the prepared tray.
      4. Spread filling over base. Roll out the remaining dough and place over filling, trimming to size. Prick the with a fork 20 times.
      5. Bake for 10 mins, then reduce temperature to 180°C (160°C fan-forced) and cook for a further 20 mins or until golden.
      6. Cool completely, dust with icing sugar and cut into slices.
