Orange and Poppyseed Muffins

  • 2 ½ cups self-raising flour
  • ¾ cup caster sugar
  • 1 tablespoon poppy seeds
  • ¼ cup milk
  • ½ cup unsweetened greek yoghurt
  • ¼ cup vegetable oil
  • 75gm melted butter
  • 2 beaten eggs
  • ¼ cup fresh orange juice
  • 2 teaspoons fresh orange zest
  • ¼ cup marmalade


  1. Pre-heat oven to 220 degrees Celsius (fan-forced).
  2. Sift flour into large mixing bowl. Add sugar and poppy seeds and stir to combine.
  3. Add remaining ingredients, apart from the marmalade, and stir gently to combine.
  4. Prepare muffin tin by greasing well or spraying with oil.
  5. Spoon mixture into tins.
  6. Cook for 5 minutes before turning the oven temperature down to 190 degrees Celsius (fan-forced). Bake for a further 10-15 minutes or until a metal skewer inserted into a muffin comes out clean.
  7. Remove from oven and use a brush to glaze the muffins with marmalade.
  8. Allow to cool for a few minutes before easing each muffin from the tin and placing on a cooling rack.
