Recipe Plum Glazed Ham

Ingredients

    • Half leg ham, approx 5kg
    • 15 plums, dark coloured, ripe but firm.
    • 250g brown sugar
    • 1/4 cup dark rum
    • 1/4 cup balsamic glaze
    • 1 cup Summer Snow Apple Juice
    • A handful of cloves

      Serves 15 | Cooking time 45 mins

      Method:

      1. To make glaze, remove stones from 8 plums and cut into chunks. Place in a saucepan, add sugar, dark rum, balsamic glaze and apple juice. Cook over medium heat for 30-35 mins or
        until plums have turned glossy and have a jammy consistency. Process in a blender until smooth. Set aside.
      2. Preheat oven to 200°C (180°C fan-forced). Remove skin from ham, carefully leaving a layer of fat. Using a sharp paring knife, slice a diamond pattern into the fat, taking care not to slice too deep. Push a clove into the centre of each diamond.
      3. Place ham in a large roasting tray. Add remaining plums, cut in halves with stones removed. Brush ham and plums generously with the glaze
      4. Cook for 45 mins, basting every 10 mins. Once caramelised, remove from oven and let rest. Serve warm or cold with the glazed plums and extra glaze on the side.
