Zucchini Slice Recipe



    • 3 zucchinis, grated, with juice squeezed out
    • 1 cup self-raising flour
    • 2 bacon rashers, chopped into small pieces
    • 5 eggs
    • 1 cup grated cheddar cheese
    • 1/4 cup parmesan cheese
    • 1 onion
    • 1 tbsp butter, softened
    • Salt and pepper to taste


            1. Pre-heat the oven to 180°C.
            2. Heat a frying pan on medium heat and add in the bacon. Once it starts to brown, and you start to see the bacon fat come out, add the onions. Cook for a few minutes to soften. Remove from heat and transfer to a baking dish to cool.
            3. In a large mixing bowl, add in the flour, cheddar cheese, parmesan, softened butter and eggs. Season with salt and pepper, then mix well to combine. Fold the grated zucchini into the mixture.
            4. Pour into the baking dish and mix well to incorporate the bacon and onion.
            5. Bake for 40 minutes or until lightly browned on top.
            6. Serve and enjoy.
