Recipe Prawn Mango Lettuce Cups

Ingredients

    • 2 mangoes, diced
    • 1 avocado, diced
    • 2 Lebanese cucumbers, diced
    • 24 cooked tiger prawns
    • 24 baby gem lettuce leaves
    • Fresh chives, to garnish
    • Cocktail sauce
    • 2 tbsp whole egg mayonnaise
    • 2 tbsp Meander Valley Dairy Crème Fraîche
    • 2 tbsp tomato sauce
    • 1 tbsp lemon juice
    • 2 tsp Worcestershire sauce
    • ½ tsp Tabasco sauce
    • ¼ tsp smoked paprika

      Difficulty: Easy

      Method:

      1. For the cocktail sauce, mix together all ingredients in a medium bowl. Chill.
      2. Place mango, avocado, cucumber and chilli in a medium bowl. Season and stir to combine.
      3. Arrange lettuce leaves on a platter. Place a prawn on each leaf and top with mango mixture. Drizzle over dressing and garnish with chopped chives.
